The last question's the easiest one: No, it doesn't matter that some are speed dice. The only way Limax's dice will ever reroll is if Limax manages to capture a die of yours. At that point if you lose one more die you're toast, so Speed power is irrelevant -- you can't get "more dead" by having multiple dice taken by a speed attack!
As to the other questions, you can afford to lose 21 sides, so either of your smaller dice can get taken. I'd capture Limax's [10], meaning your only unwanted rerolls would be 1, 2, 4 and 6, and I'd use the [20] to do it, because there'd only be a 20% chance of it getting captured. If it did, of course you only attack with the [30] from then on to minimize your chance of losing... unless Limax's reroll left your [10] multiply vulnerable.
